In the misty hills around Fuding, tender one-bud–one–two-leaf shoots are picked in early spring to make White Peony. The fresh leaves are spread in thin layers to wither slowly in cool air and gentle light, allowing a soft, natural oxidation before a low, finishing bake locks in their character. This unhurried handling keeps the leaves broad and downy, brewing a pale gold cup with meadow-floral notes, hints of stone fruit and honey, and a calm, rounded sweetness that lingers quietly.
